Things to Look Out For
Frites are a Belgian religion
The chips are Belgian, not French, and they take them seriously. Twice-fried, served in a paper cone from a friterie with mayonnaise or a dozen other sauces. Skip the restaurant version; the standalone friterie or 'frietkot' on the square does the real thing, and it makes a proper cheap lunch.
Two languages, one country
Bruges and the north speak Flemish (Dutch); Brussels and the south speak French. And people can be touchy about which you use. English is the safe neutral ground and almost universally spoken, so lead with it rather than guessing wrong, especially on signage where place names switch between the two.
Bruges before the day-trips
Bruges fills with day-trippers from Brussels and the cruise ships by late morning. Staying the night is the trick. The medieval centre empties by evening and the canals go still and golden under the lamps, the version of the city the day crowds never see.

Plan Your Timing
Belgium and the Low Countries are best from May to September. Mild, longer days, the canals and squares at their most pleasant. April and October bring the tulip shoulder and quieter towns, cool but fine. December lights the Christmas markets in Bruges and Brussels. January through March are grey, damp and short on daylight, with a raw wind off the North Sea.
