    Proceed for Cappadocia city tour including; Goreme Open Air Museum, the top attraction of Cappadocia in Turkey’s central Anatolian region is a massive collection of historical monasteries and cave churches displaying fine specimens of ancient Byzantine frescoes. Pasabag and Uchisar Castle which is a stunning rock formation located in the town of Uchisar in the region of Cappadocia, Turkey. There are several different castles to visit in the region, not only is this the biggest castle in Cappadocia but it’s also the most popular. Overnight in Cappadocia(B)

    The balloons fly at dawn, or not at all

    Cappadocia's hot-air balloons launch in the still air just after sunrise, and the flight is cancelled the moment the wind picks up. Which it often does. Book your first morning, not your last, so a weather scrub leaves you a second chance. The 4am pickup is brutal and entirely worth it.

    Istanbul straddles two continents

    The Bosphorus splits the city between Europe and Asia, and the ferry across is the cheapest, best tour in town. Fifteen minutes, a glass of tea, the old skyline of minarets on one side and the new towers on the other. Skip the pricey dinner cruise once and just take the commuter ferry at dusk.

    The bazaar price is the opening bid

    In the Grand Bazaar and the spice market the first number is theatre. Expect to settle around half, and walk away once to find the real price following you out the door. Carpets, lamps and gold are where it matters; for tea and spices the haggle is gentler. Cash and a smile go further than a hard line.

    When to Go

    Turkey reads best in the shoulder seasons. April to early June and September to October, when Istanbul is mild, the Aegean coast is warm but not scorching, and Cappadocia's balloon mornings are clear. July and August are hot, especially on the Mediterranean coast and the central plateau, and the sites are crowded. November to March is cool and wet in Istanbul and genuinely cold and often snowy in Cappadocia. Atmospheric, low-season, but pack for it.

    A slow morning through the old city. Sultanahmet, the cisterns, a guide who knew which courtyards to duck into to lose the crowds. Istanbul rewards a good guide on the first pass; you come back later for the corners that caught you.

    The land changes an hour out of the airport. Soft volcanic stone carved into cones and chimneys, whole villages cut into the rock. We checked into a cave hotel and the room was literally hollowed out of the hillside, cool and quiet.

    Day 4. Dawn, a hundred balloons rising

    The 4am pickup nearly broke us and then the balloon lifted off Göreme at first light with a hundred others around us, all rising silent over the valleys. It is the photograph everyone has seen and still isn't ready for in person.

    The north tour took us down into one of the underground cities. Eight levels deep, ventilation shafts and rolling stone doors carved by people hiding out centuries ago. You stoop through the tunnels into rooms that go on far below.
